The NSF label promises consumers, restaurant owners and those that use commercial kitchen equipment or prepare food in a commercial setting that the manufacturer of the piece of kitchen equipment they have purchased or are using has passed highly detailed safety requirements as outlined by the not-for-profit organization. This includes a product assessment of design and construction, a material evaluation of anything that comes in contact with food, and even performance testing where applicable. Additionally, manufacturers who are awarded an NSF certification have their facilities audited unannounced to ensure compliance.
If a piece of commercial kitchen equipment is poorly constructed or has been manufactured out of sub-standard or improper materials, said equipment could contaminate food or malfunction during the food preparation process causing undesirable results for both the restaurant and the consumer.
Most city and county codes require that food service establishments use NSF certified equipment. This includes fairs and carnivals. You risk being shut down without the proper equipment. Contact your local health department for requirements.
Some companies will label their food service products stating that their equipment “Meets NSF Standards” or something to that effect. That is NOT NSF approved but it may meet the requirements of your local health inspector. Again, contact your local health department with those questions.
